Sleeping in and making fluffy pancakes is my ultimate weekend joy, and on Mother's Day, these fluffy pancakes are our kid's go-to recipe! I like to make plain for my son and daughter, chocolate chip for my youngest and blueberry for me and my husband.Cooking and baking really is my time to relax and play around with a recipe. I have been in search of the right recipe for fluffy pancakes for a long time and I think I have it. Fluffy Pancakes for Mother's Day

I like to double this base recipe for our family of 5. This is good for 3-4 people.

Ingredients Needed:

In a medium bowl:

  • 1 1/2 cups of all purpose flour
  • 4 tsp baking powder (secret for the fluffiness)
  • 1 pinch of salt
  • 1 tablespoon of sugar (optional)

In a large bowl:

  • 1 tsp of vanilla
  • 1/4 cup of melted and cooled butter
  • 1 1/4 cup of milk
  • 1 egg

Additional ingredients:

  • Blueberries (fresh or frozen)
  • Chocolate chips

Method for making fluffy pancakes

Start by combining your dry ingredients; flour, baking powder and a pinch of salt in a medium-size bowl. Mix together with a whisk.In a large bowl, combine your wet ingredients; egg, milk, vanilla and cooled melted butter. Whisk together until smooth.Slowing add in your dry ingredients to your wet.Fluffy Pancakes Perfect for Mothers DayUse a wooden spoon, and try to not over mix as that can lead to tuff pancakes. We want fluffy ones!I like to pour some of the plain pancake batter into a smaller bowl and add in the blueberries or chocolate chips, for a separate batch of those.Fluffy Pancakes Perfect for Mothers Day

Cooking your pancakes

Heat a skillet or pan on medium to low heat, with butter or coconut oil.Pour 1/4 cup of batter into your hot pan, and let it smooth out on its own. Cook for a few minutes on each side flip when the bubbles form.If your pancakes are browning too quickly, I like to turn down the heat slightly. Use a spatula to flip your pancakes and set on a plate when complete.Fluffy Pancakes Perfect for Mothers Day

Time to serve:
