Rainbow Mosaic Jelly Cake (recipe included)
This recipe is really easy, and created the most beautiful effect. It goes by many different names, such as Rainbow Jelly Cake, or Cathedral Window Jelly Cake, or Jelly Dessert. Depending on the pan you use, the shape of the slice of the mosaic cake will determine the name. You can simply use a 13” by 9” pan, and create squares (as per our recipe) but if you have a bunt pan, you can use that too. Have fun making this one, its so yummy, and really brings the rainbow concept to life!
